Pumpkin Pancakes For Everyone!



PUMPKIN PANCAKES
Temperatures are dipping....leaves are falling....Autumn is here at the Graystone Manor. To take a well tested recipe from the pages of October issue of Mary Engelbreits's Home Companion 1999, it is the Season for Pumpkin Pancakes!!
Yes, a confirmed pack rat here...holding onto old issues does pay off. So put on your cozy slippers, throw on a warm robe and shuffle out to whip up this family favorite.
Our special thanks to the Cambridge House Inn, Massachusetts. Serves 2-3. Makes six to seven 5-inch pancakes or twelve 3-inch pancakes. We doubled the recipe and it worked just fine.
1-cup all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 egg
1 cup milk or buttermilk
1/4 cup sour cream, light is okay
1/4 cup canned pumpkin
1 tablespoon butter, melted
1 tablespoon vanilla
1. Mix flour, baking powder, salt, and sugar together in a medium-size bowl.
2. Combine remaining ingredients in small bowl. Slowly whisk liquids into dry ingredients.
3. Spray a grill pan with cooking oil. Ladle approx 1/3 cup of batter per pancake onto pan and cook over medium heat until bubbles appear in top. Turn over and cook for a few minutes on the other side.
Do not overcook (they should be moist).
4. Serve with butter and warm maple syrup.
